I'm still not done with the post I mentioned I was working on last week so that will have to come in March. Instead, for my final February post here is a recipe I made last Tuesday, February 23. Yes, that's right, I made a potato casserole! I'd eaten this at my paternal grandmother's house approx. ten years ago and asked for her recipe but hadn't gotten around to trying it until last week. It was super easy, so I thought I'd post it on my blog for anyone looking for a potato sidedish!
INGREDIENTS:
32 oz frozen diced hash brown potato chunks
1 can cream of chicken soup, condensed
1 pint sour cream
2 cups shredded cheddar cheese
1/4 cup grated onion
1/2 cup green pepper
1/4 cup milk
1 teaspoon salt
1/4 cup melted butter
DIRECTIONS:
Stir everything including frozen potatoes in one big bowl, then pour into a buttered 9 x 13" casserole dish and place in the refrigerator overnight (I guess that's if you want it for lunch. . .I made it for supper so I put it together in the morning and took it out after 8 hrs).
Sprinkle with bread crumbs and paprika.
Bake at 350 degrees for 45 min to an hour. (Here was the finished product we all enjoyed!)
