Cheesy Potato Casserole

I'm still not done with the post I mentioned I was working on last week so that will have to come in March. Instead, for my final February post here is a recipe I made last Tuesday, February 23. Yes, that's right, I made a potato casserole! I'd eaten this at my paternal grandmother's house approx. ten years ago and asked for her recipe but hadn't gotten around to trying it until last week. It was super easy, so I thought I'd post it on my blog for anyone looking for a potato sidedish!

INGREDIENTS:

32 oz frozen diced hash brown potato chunks
1 can cream of chicken soup, condensed
1 pint sour cream
2 cups shredded cheddar cheese
1/4 cup grated onion
1/2 cup green pepper
1/4 cup milk
1 teaspoon salt
1/4 cup melted butter

DIRECTIONS:

Stir everything including frozen potatoes in one big bowl, then pour into a buttered 9 x 13" casserole dish and place in the refrigerator overnight (I guess that's if you want it for lunch. . .I made it for supper so I put it together in the morning and took it out after 8 hrs). Sprinkle with bread crumbs and paprika.
Bake at 350 degrees for 45 min to an hour. (Here was the finished product we all enjoyed!)

Hey there Andrea!!! Yes I am super excited that one of my classes ends next week that will help get some of the load of work off me. Plus we're redoing all of the floors in our house right now which is draining. I'm trying to get it all done before Dalton's two year birthday:) I was going to ask you what are you doing for Logan's birthday?? Dalton changes his mind everyday between sponge bob, football, elmo, lightning mcqueen and go diego go hahaha. Logan is so super cute helping you cook in this picture!!! Aren't they so much fun now I just love being with Dalton at this age. I think it's the best yet:) They can talk sentences and some of the things they say is so funny:) Yup we're still loving the suv with all the extra room and I hope you are still loving yours too:):):) You are so funny about the restaurant thing...I would have done the same thing lol. This morning I accidentally said Dalton why don't other people know how to drive and then he went on and on "I dive I dive I dive" the whole rest of the hour to work I was like why did I even open my mouth haha. He LOVES to pretend he's driving in fact I need to write all about his driving instances on the blog to look back on:) Anywho...yeah the pump broke on the fish tank so we had to go buy a new one but luckily now the fish are super happy because this one is way better, but Chantz said if we have to buy anything else he's flushing them down the toilet lol. I still need to get a bigger picture of them and put it up here so you can see:)
