Chocolate Pumpkin Muffins

There is something about fall that makes me want to cook. It's odd since, unlike a lot of you, cooking is not my thing. But every October I suddenly get a burst of inspiration to look through all of my cookbooks and take notice of every recipe I hear or see. I usually succeed with cooking the recipes until Thanksgiving and Christmas interrupt me, and then it's a challenge again the rest of the year.

I've only posted two prior recipes on my blog. The most recent was in August (Organic Lasagna Recipe) and the other was last October, now under my January archives (Baby's First Teeth)! In the second one, aside from writing about Logan's first two teeth (which popped up last October 28), I gave several recipes using pumpkin as an ingredient.

Until last year, I had never craved pumpkin before. I hate pumpkin pie, but when I discovered how many other options there are for pumpkin, I was in the mood again this year. Especially since pumpkin is very healthy - an extremely good source of vitamins A, B, C, and E, high in potassium, magnesium, phosphorus, iron, folate, niacin, thiamin and pantothenic acid — and is low in salt, cholesterol and saturated fat. It also helps prevent arterosclerosis, or hardening of the arteries, which can lead to strokes and/or heart attacks. A study by the USDA indicated that diets high in pumpkin as a fiber source tended to curb the appetite, yet provided more food for the same calorie count. The subjects in this study also absorbed less fat and calories from their food.

I found this website which gives a ton of pumpkin recipes. I chose Chocolate Pumpkin Muffins to try first because 1) Baking has always been more my thing and 2) It was soooo easy and quick (believe me, if I think it is easy and I didn't mess up then it is easy)!!!! I followed the directions except I doubled the amount of chocolate chips because I love chocolate - and they came out so yummy, I will be making them many times in the future no matter what the season! Chocolate Pumpkin Muffins

Ingredients:
1 c. flour
1 c. sugar
1 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/4 tsp. ground cinnamon
2 eggs, beaten
1 c. ground pumpkin (canned)
1/2 c. cooking oil
1/3 c. chocolate chips

Preparation Instructions:
Mix together. Fill muffin cups and bake at 350 for 20-25 minutes.

As you can see, Logan helped :)

Mmmm that sounds yummy I'll have to try those because I don't like pumpkin either but I LOVE chocolate chips so this would be a good way to cover up the pumpkin for me. that is so cute Logan helping:):) I couldn't help but notice your rug in the kitchen. Do you have the chef theme in your kitchen?? We have the chef theme in our kitchen and our rug looks just like the one on your floor haha crazy ANOTHER similarity. No Dalton's hulk head is still giving me trouble lol. I hope if I leave it on him this weekend while he's playing around and stuff with his regular clothes he'll grow to like it. If not we may be changing his costume at last minute. Logan sounds like Dalton with hating things on their heads. Dalton will scream and rip off whatever is on his head. He gets that mad over it. I just hope he grows out of it because I think he looks adorable with his little hats on. That is so cute that Logan likes L Mcqueen too!!! I can't wait to Dalton's bed to be finished. He had to go to a big boy bed because he was climbing out of his crib and I was so scared he would do it in the middle of the night and hurt himself. Right now he's sleeping on a pallet on the floor in his room and he's doing really well so hopefully he does the same with the bed haha. I'm going to post pictures of his nursery and then the new room once we get it all painted and decorated and everything so you will be able to see what it looks like:):) Thanks for the good luck with school I'm going to need it it's in crunch time right now. It's really alot easier than I thought it was going to be though with having Dalton beacuse this was the first semester back since I've had him. Only a little while longer and I will be done. Yay!!!
